  • Homemade Granola Bars

    Ingredients

    • 2 c. Quick cooking oats
    • 3 Tbsp. Toasted wheat germ
    • 1/3 c. Honey
    • 6 Tbsp. Margarine, melted
    • 1/2 tsp Grnd cinnamon
    • 1/3 c. Minced peanuts
    • 1/3 c. Raisins
    • 4 tsp Sesame seed
    • 1/3 c. Peanut butter
    • 2 x Beaten Large eggs
    • 3/4 tsp Vanilla
    • 3/4 c. Powdered sugar
    • 1 tsp Lowfat milk
    • 1 dsh Vanilla

    Directions

    1. In small mixing bowl combine rolled oats and wheat germ. Combine honey, half the margarine and cinnamon; add in to oats mix. Spread into 10 x 8 x 2-inch baking pan. Bake at 375 degrees for 10 to 15 min, stirring once.
    2. Cold. Transfer granola mix to the medium mixing bowl. Add in peanuts, raisins and sesame seed. In a small saucepan, combine peanut butter and remaining margarine. Cook and stir over medium heat till melted. Remove from heat; add in Large eggs and stir. Add in vanilla. Pour over granola; toss to coat.
    3. Press mix into 10 x 8 x 2-inch pan. If you like, prepare Powdered Sugar Glaze and drizzle over bars. Apply plastic wrap over pan; store in refrigerator. Cut into bars with table knife.
    4. Makes 16 bars.
    5. Powdered Sugar Glaze (optional): In a bowl, beat all ingredients till smooth.
