Homemade Cornbread

- 2 cups unbleached flour
- 2 cups cornmeal
- 2 tablespoons baking powder
- 2 tablespoons baking soda
- 1 teaspoon cayenne pepper
- 2 tablespoons fresh cracked black pepper
- 1 tablespoon salt
- ½ cup sugar
- 1 cup sweet white corn
- 1/2 cup melted butter
- 4 large eggs, beaten
- 3 cups whole buttermilk
- 1 cup shredded sharp cheddar cheese
Directions
- Place the flour, cornmeal, baking powder, baking soda, cayenne pepper, fresh cracked black pepper, salt, and sugar in a large metal bowl. Mix the ingredients with a whisk until everything is evenly incorporated.
- In a separate bowl, mix together the melted butter, beaten eggs, and buttermilk.
- Add the wet mixture to the dry ingredients, and slowly fold together with a rubber spatula. Add the sweet white corn and the cheddar cheese- continue to mix until all of the ingredients come together.
- Place the batter in a large, greased oven proof baking dish, and let sit for 15 minutes before putting in the oven.
- Bake the mixture at 375 degrees for 35 to 40 minutes, or until the top becomes brown and an inserted toothpick comes out clean.
- Serve with plenty of soft butter and honey!
