  • Holiday Quiche

    Ingredients

    • 1 1/2 c. flour
    • 2/3 c. butter flavored Crisco
    • 1 1/2 c. finely crushed butter-type crackers (Hi-Ho)
    • 1/2 c. water
    • 1 c. shredded Monterey Jack cheese
    • 1 c. shredded cheddar cheese
    • 2/3 c. minced ham, cooked sausage, pepperoni, or possibly crumbled bacon
    • 3/4 c. thin sliced green onion
    • 4 ounce. diced pimentos, liquid removed
    • 1/4 c. snipped fresh parsley
    • 1/2 teaspoon pepper
    • 5 Large eggs
    • 1 c. whipping cream
    • 1 teaspoon salt
    • 1 c. half and half

    Directions

    1. Heat oven to 400 degrees. Combine flour and cracker crumbs. Cut in Crisco. Sprinkle with water - 1 Tbsp. at a time. Press into ungreased 15 x 10 x 1 inch pan. Prick with a fork.
    2. Prepare filling by sprinkling cheese, meat, onion, parsley, and pimentos over crust. Beat Large eggs, creams, and seasonings. Pour filling over crust. Bake 25-30 min. Cold 5-10 min. Serve hot. Great for brunch or possibly cut in small pcs for an appetizer.
