  • Holiday Chocolate Mash Potato Cake

    A DeWitt Family Tradition From My Grandmother Bertha DeWitt's recipes This cake has been made for generations in my family. Every holiday we make one of these chocolate spice cakes. My children make them now.

    Ingredients

    • Cream together well:
    • 1 cup butter
    • 2 cups sugar
    • Stir in and mix well:
    • 4 eggs beaten
    • Then add:
    • 1 cup Ghirardelli Chocolate (ground)
    • 2 cups flour
    • 2 tsp. baking powder
    • 1 tsp cinnamon
    • 1 tsp cloves
    • 1 tsp allspice
    • Then add and mix well:
    • 1 cup mashed potatoes (hot or warm)
    • ½ cup milk
    • Optional additions (1 cup): chopped nuts and or raisins, chocolate chips
    • Pour into greased bundt pan
    • Bake for 50 to 60 minutes.

    Directions

    1. Preheat oven to 350.

      As a young girl I used to make this cake all of the time.I even wona 1st. place ribbon at the fair one year. My mother had given the receipt to my aunt and when my mother died in a car crash the receipt was lost. Thank-you so much I am now 60 and have the receipt again. This cake is also good with a cream cheese frostin with two teaspoons of lemon juice in it. That is what helped me win the ribbon.
