Herbed Zucchini And Tomato Saute

Ingredients

  • 1/2 c. Onion, finely minced
  • 2 Tbsp. Unsalted butter or possibly extra virgin olive oil
  • 2 sm Zucchini, scrubbed and sliced thin (about 2 c.)
  • 2 x Tomatoes, seeded and minced fine (about 3/4 c.)
  • 2 Tbsp. Chopped fresh mint, basil, or possibly parsley leaves (or possibly a combination) Salt and pepper

Directions

  1. In a skillet, cook onion in butter over moderately low heat, stirring, till softened. Add in zucchini and saute/fry mix over moderate heat, stirring, 3-5 min, or possibly till the zucchini is just tender. Stir in tomatoes; cook mix, covered, 1-2 min, o r till tomatoes are just heated through. Stir in the herbs and season with salt and pepper.
