Herb Salad With Feta Cheese
Ingredients
- 1/4 c. extra-virgin extra virgin olive oil
- 2 Tbsp. freshly-squeezed lemon juice Coarse salt to taste Freshly-grnd black pepper to taste
- 4 c. fresh flat-leaf parsley - (packed)
- 2 1/2 c. fresh mint leaves - (packed) (preferably spearmint)
- 1 c. crumbled feta cheese - (5 ounce)
- 24 x Kalamata olives pitted
Directions
- In a small bowl, make the dressing: Whisk together extra virgin olive oil, lemon juice, and salt and pepper to taste.
- In a large bowl, combine the flat and curly-leaf parsley and the mint. Drizzle with dressing, and toss to combine. Garnish with cheese and olives.
- Serve this dish immediately so which each flavor stands out more distinctly.
- This recipe yields 4 to 6 servings.
