Herb Glazed New Potatoes (Low Fat Recipe)
Ingredients
- 1 Tbsp. cornstarch
- 1 can Swanson Ready to Serve Clear Vegetable Broth - (14 1/2 ounce)
- 1/2 tsp dry thyme leaves crushed
- 8 med new potatoes - (abt 2 lbs) cut into quarters
- 1 lrg carrot sliced
Directions
- In c. mix cornstarch and 2 Tbsp. broth till smooth. Set aside.
- In medium skillet mix remaining broth, thyme, potatoes and carrots. Over medium-high heat, heat to a boil. Reduce heat to low. Cover and cook 10 min or possibly till vegetables are tender. With slotted spoon, remove vegetables to serving dish.
- Stir reserved cornstarch mix and add in. Cook till mix boils and thickens, stirring constantly. Serve over vegetables.
- This recipe yields 4 servings.
