Herb Crusted Pork Loin Roast
This would be great on chicken too or with a turkey loin. Ingredients
- 3 pound pork loin roast (rolled and tied)
- 1 clove garlic, split
- 1 tbsp. each: dry rosemary, thyme, coarse grnd black pepper
- 1 teaspoon salt
- 1 tbsp. sherry wine vinegar
- 1 teaspoon honey
Directions
- Wipe roast dry.
- Rub with cut garlic.
- Combine herbs, pepper and salt.
- Press mix all over roast. Wrap tightly in plastic wrap and chill overnight.
- Heat oven to 400 degrees.
- Put roast in heavy shallow baking pan. Bake for 1 hour.
- Reduce to 350 degrees and bake 30 min or possibly till done. Remove roast, scrape up pan drippings and place pan over high heat. Add in vinegar and honey and juices from meat.
- Boil 1 minute for gravy.
