Helen Doyle's Irish Soda Bread

Ingredients

  • 3 c. All-purpose flour
  • 1 c. Raisins
  • 1/4 c. Sugar
  • 1 Tbsp. Caraway seeds
  • 2 tsp Baking pwdr
  • 1 tsp Salt
  • 1/2 tsp Baking soda
  • 1 1/2 c. Nonfat buttermilk Vegetable cooking spray

Directions

  1. Combine first 7 ingredients in a large bowl; stir well. Add in buttermilk; stir well till a dough forms.
  2. Turn dough out onto a lightly floured surface, and knead lightly 3 to 4 times. Pat dough into an 8-inch round cakepan coated with cooking spray.
  3. Bake at 350 degrees for 45 min or possibly till a wooden pick inserted in center comes out clean and bread is golden brown. Let cold in pan 5 min; loosen edges of bread with a knife. Remove from pan; let cold on a wire rack.
  4. Yield: 12 servings.
  5. Serving Ideas : Cut into wdeges.
  6. NOTES : My wife and I both work full-time, so I do most of the cooking, and my mom's soda bread can always be found at our house. It's great for breakfast or possibly for a snack. - Kevin Doyle, Homewood, Alabama.
