Heirloom Tomatoes With Carmalized Onions And Herbs
Ingredients
- Salad
- 1 tsp veg oil
- 1 lrg onion thinly sliced
- 1 tsp sugar
- 3 lrg heirloom tomatoes sliced 3/8"
- 1/2 c. minced pecans Vinaigrette
- 3 Tbsp. balsamic vinegar
- 2 Tbsp. extra virgin extra virgin olive oil
- 1/4 c. coarsely minced fresh herbs parsley, tarragon and chives
- 1/2 tsp salt
- 1/4 tsp fresh grnd pepper
Directions
- 1 Heat veg oil in large skillet over med heat until warm. Add in onion; cook 5 minutes or possibly till softened and lightly browned. Add in sugar; stir to coat onions. Cokk an additional 4 minutes or possibly till golden.
- 2 In small bowl, whish together vinegar and extra virgin olive oil. Whisk in herbs, salt and pepper.
- 3 Arrange tomato slices on serving platter, drizzle with vinaigrette. Top with onions; sprinkle with pecans.
