Heavenly Shrimp Cocktail
Prep: 45 min Servings: 4by Lauren3 recipes>A refreshing Baja style Shrimp Cocktail serve in a glass with cooked shrimp, cucumber, tomatoes, onions, cilantro, avocado in a mixture of cocktail sauce and orange juice. I added my own twist by adding chopped Jicama for extra crunch! Ingredients
- 3/4 lb.Medium shrimp (shell on) cooked in ½ cup water, 1/4 cup white wine, 1/8 tsq. salt.
- ½ cup cocktail sauce
- 3/4 cup chopped or diced cucumber
- 1 cup chopped tomatoes
- ¾ cup chopped onions
- ½ cup chopped jicama
- 1 ripe avocado, chopped
- 2 large oranges to make about ¾ – 1 c. fresh squeezed orange juice
- ½ cup chopped cilantro
- ¼ tsp. salt
- Orange slices for garnish
Directions
- In pan, add shrimp to water, white wine and bring to a boil. Take out shrimp and let cool. Reserve stock. Peel cooked shrimp and cut into pieces about 1/4 inch.
- In large bowl, mix cocktail sauce, orange juice, shrimp stock, chopped cucumber, jicama, cilantro, and tomatoes. Add salt to taste.
- Mix in cooked shrimp and chill.
- Right before serving, add the chopped avocadoes, spoon into glass, garnish with an orange slice and serve with a spoon.
