  • Hearty vegetable beef soup

    A winter staple for my house. This hearty vegetable soup is great for a meal. My kids love it and its a great way for all of us to consume a ton of vegetables.

    Ingredients

    • 1 lb lean ground beef
    • 1 cup chopped onion
    • 1 cup cubed potato
    • 1 cup sliced carrots
    • ½ cup diced celery
    • 1 cup shredded cabbage
    • 1 (14 ½ oz) can stewed tomatoes
    • ¼ cup rice (uncooked)
    • ½ tsp thyme
    • ¼ tsp basil
    • 5 tsp salt
    • 1/8 tsp pepper
    • 6 cups water
    • Grated parmesan cheese

    Directions

    1. In a large soup pan, brown beef and onion together.
    2. Add potato and water; bring to a boil.
    3. Add remaining ingredients except cheese.
    4. Reduce heat and simmer, covered for 1 hour.
    5. Serve sprinkled with cheese.

      Julie, I enjoyed making this recipe even in the summer. It is comfort food and it was tasty. My family thought it was good.

        Used 4 cups chicken broth instead of the water. This is a very good tasting recipe; however cooking for 1 hour is way too long and the potato and cabbage became very mushy. Will make again with some changes in the cooking time. Also see no need for the rice - it kinda disappeared into the soup.
