Hearty Vegetable Beef Barley Soup
Ingredients
- 1/2 pound fondue beef cut into sm. chunks
- 1/2 c. minced onion
- 1 clove garlic, chopped
- 7 c. water
- 1 (14 ounce.) can whole tomatoes, minced into sm. pcs, don't drain
- 1/2 c. med. barley
- 1/2 c. sliced celery
- 1/2 c. sliced carrots
- 2 beef bouillon cubes
- 1/2 teaspoon crushed basil
- 1 bay leaf
- 1 (9 ounce.) pkg. frzn mixed vegetables
Directions
- In Dutch oven brown meat. Add in onion and garlic; cook till onion is tender. Drain. Stir in remaining ingredients except for frzn vegetables. Cover and bring to boil. Reduce heat, simmer for 1 hour, stirring occasionally. Add in frzn vegetables cook additional 15 min. More water can be added if soup gets too thick. You can also use more than 1/2 lb. of meat. This soup is great with some corn muffins.
