  • Hearty Tomato Sauce

    This sauce is a hybrid between a traditional marinara sauce and puttanesca sauce. It still features that rich tomato flavor as a base but has a lot of different veggies blending together well and adding quite a bit of flavor.

    Ingredients

    • 2 large cans of diced tomatoes
    • 1 spanish onion, chopped
    • 2 shallots, chopped
    • 5 cloves of garlic, minced
    • 1 large red bell pepper, chopped
    • 1 large orange bell pepper, chopped
    • 3 scallions, chopped
    • 1 medium sized carrot, finely grated
    • 2 tbl. spoons of fresh thyme
    • 3 tbl. spoons butter
    • 2 tbl. spoons of california chili powder
    • salt and pepper to taste

    Directions

    1. Melt butter in a large skillet
    2. Saute onion, shallot, and garlic in butter until translucent, but not browned
    3. Add Bell peppers and scallions and saute for 2 min.
    4. Add carrot, thyme, chopped tomato with juice, and chili powder, mix together, reduce heat to low, and simmer for 45 min, to an hour, stirring occasionally.
