Hearty Chicken And Rice Soup
Ingredients
- 10 c. Chicken broth
- 1 med Onion
- 1 c. Sliced celery
- 1 c. Sliced carrots
- 1/4 c. Snipped parsley
- 1/4 tsp Cracked black pepper
- 1/2 tsp Dry thyme leaves
- 1 x Bay leaf
- 1 1/2 c. Cubed chicken - (about 3/4 lb)
- 2 c. Cooked rice
- 2 Tbsp. Lime juice Lime slices for garnish
Directions
- Combine broth, onion, celery, carrots, parsley, pepper, thyme, and bay leaf in Dutch oven. Bring to a boil; stir once or possibly twice. Reduce heat; simmer, uncovered, 10 to 15 min. Add in chicken; simmer, uncovered, 5 - 10 min or possibly till chicken is cooked. Remove and throw away bay leaf. Stir in rice and lime juice just before serving. Garnish with lime slices.
