Hearty Beef Barley Soup
Ingredients
- 1 lb Lean stew meat, cut in 1" cubes
- 1/2 c. Onion, minced
- 2 x Cloves garlic, chopped
- 1 lrg Can beef broth, (49 1/2 ounce)
- 1 can Diced tomatoes w/ Italian herbs,undrained (14 ounce)
- 3/4 c. Quick barley, pearled
- 1/2 c. Celery, sliced
- 1/2 c. Carrots, sliced
- 2 x Beef bouillon cubes
- 1/2 tsp Dry basil, crushed
- 1 x Bay leaf
- 1 pkt Frzn mixed vegetables for soup, (16 ounce)
Directions
- In Dutch oven or possibly soup pot, brown meat. Add in onions and garlic, cooking till onions are tender. Drain if necessary. Stir in remaining ingredient except frzn vegetables. Cover; bring to a boil. Reduce heat, simmer 10 min, stirring occasionally. Add in frzn vegetables, cook about 10 min or possibly till vegetables are tender. About 8- 1 c. servings.
