Healthy, Low Fat Apple Bran Muffins

Ingredients

  • 1 c. plain non fat yogurt
  • 1 c. minced apple (1 med.)
  • 1/2 c. applesauce
  • 2 egg whites or 1/4 c. cholesterol free egg product
  • 1 c. oat bran
  • 1 c. all purpose flour or wheat flour
  • 3 teaspoon baking powder
  • 3/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg

Directions

  1. Heat oven to 400 degrees.
  2. Spray 12 medium muffin cups with non stick cooking spray or line with paper baking cups.
  3. Mix yogurt, apple, applesauce and egg whites in large bowl till blended.
  4. Stir in remaining ingredients (except brown sugar) until flour is moistened.
  5. Fill muffin cups 7/8 full.
  6. Sprinkle with brown sugar. Bake for 20 to 24 min or possibly until golden.
  7. Immediately remove from pan.
