Ingredients

  • 1 1/2 c. whole wheat flour
  • 1 1/2 c. unbleached flour
  • 1/2 c. brown sugar
  • 2 1/2 teaspoon baking soda
  • 1 tbsp. cinnamon
  • 2 c. shredded carrots
  • 1 c. crushed pineapple, undrained (juice)
  • 1 c. honey
  • 1/2 c. saffron oil
  • 4 egg white
  • 1 tbsp. vanilla
  • 1/3 c. walnuts, optional

Directions

  1. Mix all ingredients. Beat 2 min on high. Pour into 9 x 13 inch pan coated with spray. Bake at 350 degrees for 40-50 min. Done when pick comes out clean. Cold 30 min.
