These Apple Muffins are made with some almond flour to give it an almond note and are soft and full of flavor, even though they are low in fat and calories.

Ingredients

  • 1 cup all purpose flour
  • 1/2 cup wheat flour
  • 1/2 cup almond flour
  • 1 tablespoon cinnamon
  • 1 teaspoon cardamom
  • 1/2 teaspoon nutmeg
  • 1.5 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 egg
  • 1/3 cup of light brown sugar
  • 1/3 cup of apple cider
  • 1/2 cup unsweetened apple sauce
  • 1/4 cup Canola oil
  • 1/3 cup of nonfat Greek Yogurt
  • 1/3 cup of pure maple syrup
  • 1 Granny Smith apple, peeled and chopped
  • 3/4 c. blueberries
  • 1/4 cup sliced almonds

Directions

  1. Preheat your oven to 400 degrees F. Line muffin tin with muffin cups. Whisk together your dry ingredients, flours through baking soda in a large mixing bowl.
  2. In a separate mixing bowl, whisk together brown sugar and egg. Then add apple sauce through maple syrup and whisk together.
  3. Stir your chopped apples and blueberries into the dry ingredients. Add the wet ingredients and stir until just combined.
  4. Fill muffin cups 2/3 full. Top with a large pinch of sliced almonds, Bake for 15-20 minutes or until golden and a toothpick comes out clean.
