  • Hazelnut Meringues

    Ingredients

    • 3 x egg whites
    • 1/2 tsp cream of tartar
    • 1 c. superfine sugar
    • 1 tsp vanilla extract
    • 1/4 tsp hazelnut extract
    • 1 c. minced toasted hazelnuts
    • 1 ounce bittersweet chocolate melted

    Directions

    1. Beat egg whites till foamy. Add in cream of tartar and beat to soft peaks. Gradually beat in sugar 1 Tbsp. at a time. Beat till stiff peaks form and sugar is dissolved. Stir in vanilla and hazelnut extracts and hazelnuts.
    2. Using Tbsp., spoon meringue onto 2 baking sheets lined with parchment paper for a total of 18. Bake at 275 degrees till meringues are hard and lightly browned, about 35 min. Let cold, then drizzle with chocolate.
    3. This recipe yields 18 meringues.
    4. Comments: To save time, buy hazelnuts which have already been peeled, or possibly even peeled and toasted. Hazelnut extract is available at specialty and gourmet stores. You can find superfine sugar at grocery stores, or possibly you could just process regular sugar to pwdr in a blender or possibly food processor.
