  • Hard Boiled Egg Fritters (Bunuelitos De Huevo Duro)

    Ingredients

    • 4 x Hard-boiled Large eggs minced
    • 1 slc Cured ham chopped
    • 1/2 c. Extra virgin olive oil for frying Salt and pepper to taste
    • 1/3 c. Flour
    • 1/3 tsp Baking pwdr
    • 1 x Egg
    • 1/3 c. Water

    Directions

    1. Put flour in mixing bowl and gradually add in sufficient water (about 1/3 c.) to make a batter of the consistency of a thin cream sauce. Stir in one lightly beaten egg and the baking pwdr.
    2. Chop hard-boiled Large eggs, mince ham, fold in batter, add in salt and pepper to taste. (This much may be done a day in advance.)
    3. Heat sufficient extra virgin olive oil in a large frying pan to cover the bottom to a depth of 1/4-inch (about 1/2 c.). When oil begins to smoke, drop in cod mix off tsp. and fry till well browned, turning once. Total frying time will be 10 to 15 min. Drain on brown paper before serving.
    4. Comments: The fritters should be small sufficient to be eaten in one bite from a toothpick. They need not be served warm, and in fact are best just hot. The basic batter will make three to four dozen small fritters and can be used for many varieties.
