  • Ham Croquettes With Egg Sauce

    Ingredients

    • 1 c. Coarsely grnd ham
    • 1/4 c. Cracker crumbs or possibly meal
    • 1 1/2 Tbsp. Butter
    • 2 Tbsp. Onion, minced
    • 1 1/2 Tbsp. All-purpose flour
    • 1/2 c. Lowfat milk
    • 1/2 Tbsp. Prepared mustard
    • 1 pch Powdered cloves
    • 1/2 x Egg, beaten
    • 2 Tbsp. Beaten egg for coating
    • 1/4 c. Bread crumbs Salt & pepper to taste Oil for frying
    • 1 1/2 Tbsp. Butter
    • 1 1/2 Tbsp. All-purpose flour
    • 1 c. Lowfat milk
    • 1 x Hard boiled egg, chopped
    • 1/2 tsp Horseradish Salt & pepper to taste

    Directions

    1. Cook onion in butter till tender; add in flour and blend well. Add in lowfat milk and stir till thick and smooth. Set aside to cold. Combine ham, sauce, mustard, egg, clove, cracker crumbs, salt and pepper. Shape into 4 equal size croquettes. Dip in egg and then in bread crumbs. Refrigeratein refrigerator for a few hrs. Fry in warm oil till golden. Drain on paper towels.
    2. Serve warm with egg sauce.
    3. Serves 2.
    4. To make egg sauce, heat butter, blend in flour and stir. Add in lowfat milk; cook till smooth and thick. Season with salt and pepper, horseradish and chopped egg. Serve over the croquettes.
