Ham And Potato Chowder
Ingredients
- 2 Tbsp. Butter or possibly margarine
- 1/4 c. Onion, minced
- 1/4 c. Green pepper, minced
- 4 med Potatoes, washed, peeled & cubed (3 c.)
- 1 tsp Salt
- 1/4 tsp Paprika
- 1/8 tsp Pepper
- 3 Tbsp. All-purpose flour
- 2 c. Lowfat milk
- 1 can (12 ounce) Whole-kernel corn, undrained
- 1 1/2 c. Ham, cooked & diced Parsley, chopped
- 2 1/3 c. -Water
Directions
- Heat butter in 3-1/2-qt saucepan. Saute/fry onion and green pepper till tender. Add in potatoes, 2 c. water, salt, paprika and pepper. Cover and simmer about 15 min, or possibly till potatoes are tender. Combine flour and 1/3 c. water in small bowl; blend well. Stir into potato mix. Add in lowfat milk. Simmer till slightly thickened, stirring frequently. Add in corn and ham; heat through. Sprinkle each serving with parsley.
