  • Ham and Bean Stew

    A light dinner perfect for that leftover ham.

    Ingredients

    • 1 tsp. canola oil
    • 1 tsp. unsalted butter
    • 1-1/2 cups chopped onion
    • 1/2 cup chopped scallions
    • 1 Tbsp. all purpose flour
    • 1-1/2 cups low fat chicken stock
    • 1/2 lb. green beans
    • 1 pinch ground black pepper
    • 1/2 tsp. italian seasoning
    • 2 zucchinis, sliced
    • 1 lb. spiral cut ham, lean in 1" cubes
    • 1 Tbsp. chopped parsley

    Directions

    1. Heat the oil & butter in a saucepan.
    2. Add the onion and green onion and saute for a couple of minutes.
    3. Stir in the flour and then add the chicken stock.
    4. Bring to a boil stirring all the time.
    5. Add the beans, a pinch of salt, pepper and seasoning.
    6. Bring back to a boil for 2 minutes.
    7. Add the zucchini and ham and keep at a low boil for 2 more minutes.
    8. Divide amoung 4 bowls and sprinkle with chopped parsley to serve.
