  • Ham And Bean Soup

    Ingredients

    • 2 tsp REDUCED CALORIE MARGARINE
    • 1/2 c. Minced ONION
    • 1/2 c. SLICED CELERY
    • 1 1/2 c. LOW SODIUM BEEF BROTH
    • 1/4 c. LOW SODIUM TOMATO PASTE
    • 4 ounce CANNED BLACK BEANS
    • 1/2 tsp Dry THYME
    • 8 ounce CUBED COOKED LEAN HAM
    • 1 c. Minced SPINACH LEAVES
    • 1 tsp PARMESAN CHEESE

    Directions

    1. 1. IN A 3 Qt CASSEROLE, MICROWAVE THE MARGARINE FOR 40 SECONDS ON HEAT POWER. Add in ONION AND CELERY, STIRRING TO COAT WITH MARGARINE. WITH VENTED COVER, MICROWAVE ON HIGH FOR 4 Min, STIRRING ONCE.
    2. 2. Add in BROTH, TOMATO PASTE, BEANS AND THYME. WITH VENTED COVER, MICROWAVE ON HIGH FOR 4 Min, STIRRING TWICE.
    3. 3. Add in HAM, SPINACH AND PARMESAN CHEESE. WITH VENTED COVER, MICROWAVE ON HIGH FOR 2 Min, STIRRING ONCE.

      Great recipe and not so difficult to prepare. In order to make it even tastier I added a few slices of jamon iberico de bellota - aka iberico ham or pata negra- thinly cut. Because iberico has a strong and delicious flavor you do not need much, only 50 grams or 1.8 OZ for four people added once the soup is finished.
