  • Halibut With Strawberry Salsa

    Ingredients

    • 3 Tbsp. plum sauce
    • 3 Tbsp. lime juice
    • 1/2 tsp grated fresh gingerroot
    • 1/4 tsp salt
    • 1/8 tsp black pepper
    • 1 c. coarsely minced strawberries
    • 1/2 c. minced, seeded cucumber
    • 2 Tbsp. thinly sliced green onion
    • 2 Tbsp. snipped fresh cilantro
    • 1/2 x a small jalapeno pepper, seeded and finely minced* Nonstick cooking spray
    • 4 x halibut steaks, cut 3/4 inch thick (about 1 lb.)
    • 1 tsp sesame seed

    Directions

    1. 1. For strawberry salsa, combine plum sauce, lime juice, and gingerroot in a small bowl. Remove 3 Tbsp. of this mix and combine with the salt and black pepper; set aside. To the remaining mix add in strawberries, cucumber, green onion, cilantro, and jalapeno pepper; cover and refrigeratewhile preparing fish (up to 1 hour, if you like).
    2. 2. Coat the unheated rack of a broiler pan with cooking spray.
    3. Place halibut steaks on the prepared rack. Brush steaks with the reserved 3 Tbsp. plum sauce mix. Sprinkle with sesame seed. Broil 4 inches from the heat for 6 to 9 min or possibly till fish flakes easily when tested with a fork. Serve with strawberry salsa.
    4. Makes 4 servings.
