• Guacamole With Oven Baked Tortillas

    • 2 x Jalapeno peppers, finely minced
    • 2 x Ripe haas avocados, coarsely minced
    • 2 Tbsp. Red onion, finely diced
    • 1/4 c. Lime juice
    • 3 Tbsp. Cilantro, coarsely minced Salt and freshly grnd pepper, to taste
    • 4 x Yellow corn tortillas, cut into eighths
    • 4 x Blue corn tortillas, cut into eighths
    • 2 Tbsp. Vegetable oil
    • 2 Tbsp. Kosher salt


    1. How to Prepare the Guacamole:1. Heat a small saute/fry pan over high heat till just smoking.
    2. 2. Sear the peppers on both sides till black. When cold sufficient to handle, peel the skin off and chop finely.
    3. 3. Combine the peppers, avocados, red onion, lime juice, and cilantro, and season with salt and pepper to taste.
    4. How to Prepare the Chips:1. Preheat the oven to 350 F.
    5. 2. Brush the chips lightly with the oil on both sides and sprinkle with salt to taste.
