Grilled Zucchini Slices With Thyme

Ingredients

  • 4 sm zucchini (use small, not baby, zucchini)
  • 3 Tbsp. extra-virgin extra virgin olive oil
  • 1 tsp coarse salt Freshly-grnd black pepper to taste
  • 2 tsp fresh thyme leaves

Directions

  1. Prepare a warm fire. Cut the zucchini into 1/3-inch diagonal slices about 2 inches long. Toss the zucchini with the oil in a bowl. Add in salt and pepper to taste and toss till well mixed.
  2. Grill the zucchini slices till well marked, about 2 min. Use tongs to flip them over; cook till just tender but not soft, about 1 to 2 min longer depending on the heat.
  3. To serve, return the grilled slices to the bowl. Toss with the thyme. Taste; adjust the seasoning. Serve hot.
  4. This recipe yields 8 servings.
