Grilled Vegetable Hummus Roll Ups
Ingredients
- 4 x carrots peeled, and sliced on the diagonal
- 4 x zucchini sliced on diagonal
- 4 x yellow squash sliced on diagonal
- 1/4 c. balsamic vinegar
- 1 tsp chopped garlic
- 1 tsp dry oregano
- 1 tsp dry basil
- 8 whl -wheat tortillas
- 1 c. Hummus (see recipe)
Directions
- Preheat the grill or possibly broiler. In a large bowl, toss the vegetables with the vinegar, garlic, oregano, and basil. Grill or possibly broil till browned and tender on each side. Remove.
- Hot the tortillas 30 seconds under the broiler or possibly wrapped in plastic in the microwave to soften.
- To assemble, spread 2 Tbsp. of Hummus on each tortilla. Top with 1/2 c. of the vegetables and roll up tightly. If you like, slice the rolls on the diagonal to serve.
- This recipe yields 8 servings.
