Grilled Vegetable Frittata
Ingredients
- 2 1/2 c. cut-up grilled vegetables in 1" pcs
- 1/2 c. fresh mozzarella in 1/2" cubes
- 1/4 c. thinly-sliced fresh basil leaves
- 2 Tbsp. extra virgin olive oil
- 6 x Large eggs beaten
- 1/4 c. grated Parmesan cheese Salt to taste Freshly-grnd black pepper to taste
Directions
- Toss vegetables, mozzarella and basil together in bowl. Set aside.
- Heat oil in 10-inch nonstick skillet over medium heat. Combine Large eggs and 3 Tbsp. Parmesan and pour into skillet. Cook Large eggs 1 minute, then add in vegetable mix and salt and pepper to taste. Cook till bottom of frittata is golden brown and set but top is still wet, about 10 min.
- Wrap skillet handle in foil. Sprinkle remaining cheese on top of frittata, then broil frittata till top is set and slightly brown, 3 to 5 min. Invert frittata onto serving plate, cut into wedges and serve.
- This recipe yields 4 servings.
