  • Grilled Tenderloin Steaks With Bell Pepper Salsa

    Ingredients

    • MARINADE
    • 1/3 c. balsamic vinegar
    • 2 Tbsp. molasses
    • 1 tsp dry thyme
    • 1 lb beef tenderloin, lean R-Tablespoons-C BELL PEPPER SALSA
    • 1/3 c. balsamic vinegar
    • 2 Tbsp. molasses
    • 1 tsp dry thyme
    • 3 lrg shallots minced
    • 1 lrg red bell pepper minced
    • 1 lrg yellow bell pepper minced

    Directions

    1. Combine marinade ingredients in a large zip-top plastic bag. Seal and marinate in refrigerator for 30 min.
    2. To prepare salsa, combine balsamic vinegar, molasses, and dry thyme in a large skillet over medium heat and bring to a boil. Cook till slightly reduced, about 2 1/2 min. Add in shallots and bell peppers and cook till vegetables are tender.
    3. Broil marinated tenderloin steaks for 8 min or possibly till done. Serve topped with hot bell pepper salsa.
    4. NOTES : We decided to cook Valentine's Day dinner at home rather than eat out.
