  • Grilled Summer Fruit Salad

    Ingredients

    • 1/4 c. unsalted butter melted
    • 2 Tbsp. brown sugar - (packed)
    • 1/2 tsp grnd cinnamon
    • 3 med nectarines halved, pitted
    • 3 med peaches halved, pitted
    • 2 Tbsp. orange juice concentrate
    • 1 Tbsp. almond or possibly orange liqueur
    • 1 Tbsp. lime juice
    • 1 1/2 c. red or possibly green seedless grapes

    Directions

    1. Combine butter, brown sugar, and cinnamon in a disposable 13- by 9-inch aluminum pan. Add in nectarines and peaches; toss to coat proportionately. Arrange fruit in a single layer.
    2. Place pan in center of cooking grate. Grill 12 to 15 min or possibly till fruit is hard-tender, turning fruit pcs once halfway through grilling time. Cold slightly. Cut fruit into thick slices.
    3. In small saucepan, combine orange juice, liqueur, and lime juice; heat through. Combine fruit, juice mix, and grapes; toss lightly. Serve hot.
    4. This recipe yields 6 servings.
    5. Comments:This recipe makes a great salad on its own or possibly a refreshing summer dessert when served over vanilla ice cream.
