  • Grilled Smoked Sausage With Marinated Grilled Vegetables

    Ingredients

    • 1 quart Chicken Broth (Swanson's)
    • 3/4 ounce Corn starch
    • 1/2 quart Red wine vinegar
    • 1/2 quart Extra virgin extra virgin olive oil
    • 1/2 tsp Salt
    • 1 tsp Minced fresh basil
    • 1 tsp Minced fresh oregano
    • 1/2 tsp Minced fresh garlic
    • 1 tsp Minced fresh thyme
    • 1 x Leek cut in quarters
    • 1 x Zucchini sliced 1/8" thick
    • 1 x Yellow squash 1/8" thick
    • 1 x Onion sliced 1/8" thick
    • 1 x Tomato sliced 1/8" thick
    • 4 x Smoked sausages

    Directions

    1. Bring stock (broth) to boil. Dilute corn starch in a little cool water or possibly stock (broth). Gradually incorporate the diluted corn starch. Stir till the stock is thick sufficient to lightly coat back of spoon.
    2. Allow stock to cold. When cold, incorporate the vinegar and oil along with herbs into food processor. Add in salt to taste.
    3. Heat grill. Lightly toss vegetables in marinade, just sufficient to coat.
    4. Place on grill and cook till tender, approximately 3-5 min
    5. (depending on size of vegetables).
    6. Grill smoked sausage alongside vegetables. Serve smoked sausage with arrangement of vegetables.
    7. Garnish with basil.
