  • Grilled Salmon With Saffron, Lemon, And Tomato Vinaigrette

    Ingredients

    • Salt Pepper
    • 3 Tbsp. Lemon juice
    • 1/2 c. Saffron oil
    • 3 x Italian Roma tomatoes, peeled, seeded and diced
    • 2 x Cloves garlic, pressed
    • 1 Tbsp. Chopped basil Cayenne
    • 4 x Fillets salmon, (7-oz) Sea salt Freshly grnd pepper
    • 3 Tbsp. Extra virgin olive oil
    • 1 x Clove garlic, split
    • 2 x Zucchinis, sliced into rounds Thyme, minced

    Directions

    1. In bowl season lemon juice with salt and pepper. Add in a healthy pinch of cayenne pepper. Whisk in saffron oil. Stir in tomatoes, being careful not to break them up. Whisk in basil and garlic. Set aside.
    2. Salmon:Season salmon with sea salt and pepper. Brush with extra virgin olive oil. Grill on medium high grill, five min on first side, 4 to 5 min on other side, so fish is just pink inside. In large non-stick pan place extra virgin olive oil and garlic. Hot till garlic begins to emit flavor. Remove cloves and add in zucchini. Saute/fry till crispy tender. Season with salt, pepper and thyme.
    3. Drain. Plate salmon with zucchini on side, and top with vinaigrette.
