Ingredients

  • 1 1/2 c. Nectarines Coarsely Minced
  • 1 c. Red Bell Pepper Coarsely Minced
  • 1 c. Red Onion Coarsely Minced
  • 1/4 c. Fresh Basil Thinly Sliced
  • 1/4 c. White Wine Vinegar
  • 1/2 tsp Grated Orange Rind
  • 1/4 c. Fresh Orange Juice
  • 2 Tbsp. Fresh Lime Juice
  • 2 Tbsp. Chopped Jalapeno Pepper
  • 2 tsp Sugar
  • 2 x Garlic Cloves Chopped
  • 1/4 tsp Salt Divided
  • 1/2 tsp Freshly Grnd Pepper
  • 4 x Salmon Fillets Vegetable Cooking Spray

Directions

  1. Combine first 11 ingredients and 1/8 tsp. salt in a medium bowl, and stir well. Let nectarine mix stand 2 hrs. Sprinkle pepper and 1/8 tsp. salt over salmon fillets. Prepare grill. Place fillets on grill rack coated with cooking spray, and grill 5 min on each side or possibly till fish flakes easily when tested with fork. Serve immediately with nectarine-red onion relish.
