Grilled Potato Wedges with Smoked Paprika Dressing

- 4 Large Yukon gold potatos par cooked and sliced into large wedges
- Canola oil for brushing
- Kosher salt and black pepper
- 1/4 C Mayonnaise
- 2 Tbl Dijon mustard
- 2 Tbl Sherry vinegar
- Juice from 2 grilled lemons
- 1/4 C Extra virgin olive oil
- 2 Tbl Smoked Paprika
- Handful of fresh flat leaf parsley for garnishing
Directions
- Preheat a charcoal or gas grill to high heat
- Grill the lemon halves and set aside for the dressing
- Brush the potato wedges with the oil and sprinkle with salt and pepper
- Grill until lightly charred and cooked through about 2 -3 minutes per side
- While the potatoes are grilling whisk together the mayonnaise , mustard , sherry vinegar and juice from the grilled lemons
- Whisk in the olive oil and season with salt and a generous amount of black pepper
- Pull the potatoes from the grill and place on a platter
- Dust the top of the potatoes with the smoked paprika
- Drizzle the dressing over the potatoes and garnish with the parsley
