Grilled Portobello Mushrooms and Sun-Dried Tomato Panini

A wonderful, savory panini, filled with grilled portobello mushrooms, sweet sun-dried tomatoes, and creamy cheese.

Ingredients

  • 2 large portobello mushrooms, sliced 1″ thick
  • 4 tablespoons sun dried tomato, chopped
  • 2 slices low fat Colby cheese
  • 4 tsp Dijon mustard
  • 4 tsp butter
  • 4 slices sprouted wheat bread

Directions

  1. Preheat panini grill.
  2. Grill sliced portobello on panini grill until just tender. About 3 minutes.
  3. Remove from grill.
  4. Spread mustard on bread slices.
  5. Top with mushrooms and chopped sun-dried tomato and cheese.
  6. Grill until cheese melts. About 4 – 5 minutes.
