  • Grilled Lemon Pepper Chicken Breasts With Thyme Gremolata

    Ingredients

    • 1/4 c. Fresh lemon juice
    • 1 Tbsp. Coarsely-grnd black pepper Salt to taste
    • 1/2 c. Extra-virgin extra virgin olive oil
    • 3 whl Boneless skinless chicken breasts
    • 1 Tbsp. Fresh thyme leaves
    • 2 lrg Garlic cloves chopped
    • 1 tsp Freshly-grated lemon zest Lemon slices Thyme sprigs

    Directions

    1. In a bowl whisk together lemon juice, pepper and salt to taste and add in oil in a stream, whisking till marinade is emulsified. With a rolling pin or possibly smooth side of a meat pounder flatten chicken 1/4-inch thick between sheets of plastic wrap. In a large resealable plastic bag marinate chicken in marinade, chilled, 30 min.
    2. Prepare grill.
    3. Make gremolata: In a small bowl stir together gremolata ingredients. Grill chicken on an oiled rack set 5 to 6 inches over glowing coals till just cooked through, about 2 min on each side.
    4. Serve chicken sprinkled with gremolata and garnished with lemon and thyme.
    5. This recipe yields 6 servings.
