Grilled Lemon-Basil Chicken
Ingredients
- 1 c. fresh basil, minced
- 1 c. canola oil
- 1/2 c. lemon juice
- 1/4 c. white wine vinegar
- 2 tsp. grated lemon peel
- 3-4 garlic cloves, minced
- 1 tsp. salt
- 1/2 tsp. pepper
- 8 boneless, skinless chicken breasts
Directions
- In a small bowl, combine the first eight ingredients. Pour 1 t c.
- into a large resealable plastic bag; add chicken. Seal bad and turn
- to coat; refrigerate for 4 hours or overnight, turning
- occasionally. Cover and refrigerate remaining marinade for
- basting.
- Drain and discard marinade. Grill chicken, covered, over medium
- heat for 6-8 minu.tes on ea. ch side or a meat thermometer reads
- 170°, basting occasionally with reserved marinade.
