  • Grilled Lamb Kebob Sandwich With Pickled Red Onions

    Ingredients

    • 1 lrg onion finely sliced
    • 1/4 c. red wine vinegar
    • 1 Tbsp. honey
    • 2 Tbsp. extra virgin olive oil
    • 1 Tbsp. finely-minced cilantro Salt to taste Freshly-grnd black pepper to taste
    • 1 Tbsp. coarsely minced fresh ginger
    • 1 x garlic clove
    • 1 Tbsp. jalapeno chile seeded, minced
    • 4 x green onions coarsely minced
    • 1/4 c. cilantro
    • 1/4 c. fresh mint
    • 1 Tbsp. fresh lime juice
    • 1 pch cumin
    • 1 c. plain yogurt Salt to taste Freshly-grnd black pepper to taste
    • 2 Tbsp. extra virgin olive oil
    • 1 lrg onion coarsely minced
    • 3 x cloves garlic coarsely minced
    • 1 Tbsp. coarsely-minced ginger
    • 1 tsp cumin
    • 1 tsp grnd coriander
    • 1/2 tsp grnd allspice
    • 1/2 tsp turmeric
    • 1/2 tsp cayenne pepper Salt to taste Freshly-grnd black pepper to taste
    • 2 c. yogurt
    • 2 lb lamb shoulder cut 1" cubes Wooden skewers soaked in water
    • 8 x Pita breads 1" of top cut off to open pocket

    Directions

    1. Pickled Red Onions: Place all ingredients in a small bowl and season with salt and pepper to taste. Let sit at room temperature for 1 hour.
    2. Cilantro-Mint Yogurt Sauce: Place ginger, garlic and chile in a food processor and process till smooth. Add in the onions, cilantro, mint, lime juice and cumin and process till coarsely minced. Add in the yogurt and process till smooth. Season with salt and pepper
    3. Lamb Kebobs: Preheat grill. Heat extra virgin olive oil in a medium skillet on the grill or possibly side burner. Add in the onions and garlic and cook till soft. Add in the spices and continue to cook for 2 min, let cold for 5 min.
    4. Place yogurt in a medium bowl and add in the onion/spice mix. Add in the lamb cubes, cover and let marinate in the refrigerator for at least 8 hrs.
    5. Remove the lamb from the marinade, and season with salt and pepper to taste. Thread 4 to 5 lamb cubes on each skewer and grill for 2 to 3 min on each side for medium doneness.
    6. Place 4 to 5 pcs of lamb in each pita, add in some of the red onions and drizzle with the yogurt sauce.
