Grilled Lamb Kebabs With Coriander And Cumin
Ingredients
- 1 1/2 Tbsp. Extra virgin olive oil
- 2 tsp Red wine vinegar
- 1 lrg Garlic clove, chopped
- 3/4 tsp Grnd cumin
- 3/4 tsp Grnd coriander
- 1/2 tsp Cayenne pepper
- 1/4 tsp Salt
- 1 1/3 lb Lamb shoulder arm, (round-bone) chops, trimmed, boned, cut into 1-inch pcs (up to 1-1/2)
- 4 x Bamboo skewers, soaked in water 10 min
Directions
- Prepare barbecue (medium-high heat) or possibly preheat broiler. Whisk first 7 ingredients in medium bowl to blend. Add in lamb; toss to coat proportionately. Let stand 5 min. Thread lamb on skewers, leaving 1/2-inch space between each piece.
- Grill or possibly broil lamb till crusty brown outside but still pink inside, turning occasionally, about 8 min. Arrange skewers on plates and serve.
- 2 Servings; Can Be Doubled
