Grilled Ground Lamb Kebabs
Ingredients
- 1 1/4 lb Grnd lamb
- 1/2 c. Parsley, fine minced
- 3/4 c. Onion, finely minced
- 1/2 c. Cilantro, finely minced
- 4 x Garlic cloves, chopped
- 3/4 tsp Salt
- 1/2 tsp Black pepper
- 1/2 tsp Paprika
- 1/2 tsp Cayenne pepper
- 12 x Bamboo skewers Extra virgin olive oil Pita bread
- 1 c. Cilantro, minced
- 1 c. Parsley, minced
- 1/4 c. Serrano or possibly jalapeno peppers seeded and minced
- 1/4 c. Water
- 1/4 c. Extra virgin olive oil
- 1 1/2 Tbsp. Garlic, chopped
- 1 tsp Salt
- 1 tsp Black pepper
- 1 tsp Cumin
Directions
- For Lamb Kebabs: Combine onion, lamb, parsley, cilantro, garlic, salt, pepper, paprika, and cayenne in a large bowl and mix well. Soak bamboo skewers in a dish of cool water at least 1 hour.
- Heat BBQ to med-high. Form 1/4 c. of lamb mix into 3" long sausages around each of the bamboo skewers. Brush lamb kebabs with oil; grill till brown and cooked through, turning frequently, about 12 min.
- For Warm-pepper Paste: Combine all ingredients in processor and blend till very finely minced.
- Serve lamb kebabs in warmed pita bread pockets and top with Warm-pepper Paste.
