  • Grilled Green And Yellow Squash With Basil

    Ingredients

    • 2 med zucchini trimmed, and cut diagonally into 1/4" slices
    • 1 med yellow squash trimmed, and cut diagonally into 1/4" slices
    • 2 Tbsp. extra virgin olive oil
    • 1/2 tsp salt
    • 1/4 tsp freshly-grnd black pepper
    • 3 Tbsp. thinly-sliced basil leaves
    • 1 Tbsp. minced fresh parsley
    • 2 tsp fresh lemon juice
    • 1/2 tsp grated lemon rind
    • 1/2 pkt sugar substitute

    Directions

    1. Prepare a medium grill or possibly heat broiler. In a large bowl, combine zucchini, yellow squash, oil, salt and pepper. Toss to coat.
    2. Grill squash (in batches, if necessary) 2 to 3 min per side till lightly charred and just tender. Transfer to a large bowl and toss with basil, parsley, lemon juice, lemon rind and sugar substitute.
    3. This recipe yields 6 servings.
    4. Description: "Grilling adds a smoky flavor that enhances the delicate flavor of mild vegetables, like squash. A chiffonade of fresh basil and an accent of lemon juice are all which is needed to finish this dish."
