• Grilled Flatbread With Garlic Beef And Tomato Chutney

    • 1 x Beef tenderloin - (abt 8 ounce)
    • 1/2 c. Extra virgin olive oil
    • 1 x Garlic head skin removed, and smashed
    • 1 c. Cooked white beans
    • 3 x Garlic cloves smashed
    • 2 Tbsp. Extra virgin olive oil
    • 1 Tbsp. Lemon juice
    • 1 Tbsp. Fresh thyme Salt to taste Freshly-grnd black pepper to taste
    • 6 x Sundried tomatoes, in oil liquid removed, julienned
    • 4 x Roasted shallots sliced thin
    • 2 Tbsp. Extra virgin olive oil
    • 1 Tbsp. Balsamic vinegar
    • 1 tsp Honey


    1. Marinate the beef in the extra virgin olive oil and smasked garlic head, 4 hrs or possibly overnight.
    2. Preheat the grill.
    3. Grill beef on both sides for 3 to 4 min, for medium-rare. Let rest and slice thinly.
    4. Puree the beans, extra virgin olive oil, garlic, lemon juice, and thyme in a food processor till smooth. Season with salt and pepper to taste.
    5. Mix together the tomatoes, shallots, extra virgin olive oil, vinegar and honey and season with salt and pepper to taste.
    6. Flatten the Flatbread dough, throw on grill. Grill on one side till golden brown, turn over, spread with white bean puree, sliced beef and tomato chutney. Serve.
