  • Grilled Flatbread With Fillet Of Beef, White Bean Puree And

    Ingredients

    • 1 x Recipe flatbread, (see related recipe)
    • 1 x 8 oz beef tenderloin
    • 1/2 c. Extra virgin olive oil
    • 1 head garlic, skin removed and smashed
    • 1 c. Cooked white beans
    • 3 x Cloves garlic, smashed
    • 2 Tbsp. Extra virgin olive oil
    • 1 Tbsp. Lemon juice
    • 1 Tbsp. Fresh thyme Salt and freshly grnd pepper
    • 6 x Sundried tomatoes, in oil, liquid removed and julienned
    • 4 x Roasted shallots, sliced thin
    • 2 Tbsp. Extra virgin olive oil
    • 1 Tbsp. Balsamic vinegar
    • 1 tsp Honey

    Directions

    1. Marinate the beef overnight in the extra virgin olive oil and garlic, 4 hrs or possibly overnight. Grill on both sides for 3 to 4 min, for mediumrare. Let rest and slice thinly. Puree the beans, extra virgin olive oil, garlic, lemon juice, thyme in a food processor till smooth. Season with salt and pepper to taste. Mix together the tomatoes, shallots, extra virgin olive oil, vinegar and honey and season with salt and pepper to taste. Flatten dough, throw on grill. Grill on one side till golden brown, turn over, spread with white bean puree, sliced beef and tomato chutney. Serve.
