  • Grilled Flank Steak And Mustard Greens

    Ingredients

    • 1 x flank steak
    • 6 Tbsp. extra virgin extra virgin olive oil Gray salt and freshly grnd black pepper or possibly Kosher salt
    • 3 Tbsp. dry oregano
    • 12 c. of greens, such as mustard, chard, or possibly spinach, washed
    • 1 Tbsp. chopped garlic Red wine vinegar Warm sauce (optional)

    Directions

    1. Prepare the grill and let it burn down to medium coals.
    2. Pour 1 Tbsp. of the extra virgin olive oil on one side of the meat and rub in. Season with salt and pepper to taste. Sprinkle half of the oregano on top and lightly press into meat. Flip and repeat process on other side.
    3. Grill, turning once, for about 10 min, or possibly till done to your taste. Let rest for a few min before serving.
    4. Meanwhile: In a large saute/fry pan, heat the remaining oil till warm. Add in the garlic and saute/fry about 1 minute, or possibly till light brown. Add in the greens and toss occasionally.
    5. After about 3 min, the greens will have cooked down. Season with a large healthy pinch of salt. Cook another 3 min. Transfer to a bowl and let cold. Splash with vinegar to taste.
    6. Cut the flank steak across the grain in 1/4 inch slices. Serve with the greens and finish with a drizzle of warm sauce (recipe is in this collection), as desired.
