Grilled Eggplant With Spicy Peanut Sauce

Ingredients

  • 1 x eggplant vegetable oil, for brushing Peanut Sauce
  • 1 x garlic, clove, chopped
  • 1 x shallot, chopped
  • 1/4 tsp crushed red pepper flakes
  • 2 tsp Oriental sesame oil
  • 1/4 c. roasted peanuts
  • 2 tsp soy sauce
  • 1 tsp sugar
  • 1 Tbsp. roasted red bell pepper, minced
  • 2 tsp fresh lemon, juice
  • 1 c. water salt pepper

Directions

  1. Sprinkle eggplant with salt and let sit for 1 hour. Pat dry.
  2. Prepare Peanut Sauce.
  3. Grill eggplant brushed with oil for 6-7 min. Turn after 3 min.
  4. Peanut Sauce:In a small pot cook garlic, shallots, red pepper flakes and sesame oil over moderate heat till vegetables are soft. Add in peanuts and roasted red peppers cook for 1 minute more.
  5. Add in soy sauce, sugar, lemon juice and 1 c. water. Boil mix, stirring till thickened. Add in salt and pepper to taste.
