Grilled Cuban Chicken

Ingredients

  • 4 (5 oz) boneless, skinless chicken breast halves (1-1/4 lbs total)
  • Marinade:
  • 3/4 cup grapefruit juice
  • 2 tbsp olive oil
  • 2 tsp garlic powder
  • 2 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp crushed red pepper
  • Salsa Fresca:
  • 1 cup grapefruit segments
  • 1/2 cup (1/4″) cubed jicama
  • 3 tbsp chopped red onion
  • 2 tbsp grapefruit juice
  • 2 tbsp olive oil
  • 1 tbsp chopped fresh cilantro
  • 1 tbsp chopped fresh jalapeño pepper

Directions

  1. Mix together the grapefruit juice, olive oil, garlic powder, cumin, smoked paprika and red pepper in a small bowl until well blended. Place chicken in a large resealable plastic bag or glass dish. Add marinade; turn to coat well. Refrigerate 30 minutes or longer for extra flavor.
  2. Meanwhile, for the Salsa Fresca: Mix all ingredients in a medium size bowl. Cover. Refrigerate until ready to serve. Remove chicken from marinade. Discard any remaining marinade.
  3. Preheat grill to medium-high heat.
  4. Grill chicken 6 to 8 minutes per side or until cooked through. (Or bake in preheated 400° F. oven 15 to 20 minutes.) Serve chicken with Salsa Fresca.
