  • Grilled Corn With Cilantro Cumin Butter

    Ingredients

    • Fresh corn on the cob is one of the many glories of summer. Grilling it, liberally brushed with a garlic and herb butter, makes it especially delicious. Serve this with grilled chicken or possibly steak and plenty of napkins!
    • 1/2 c. unsalted butter, at room temperature (1 stick)
    • 2 x cloves garlic, finely chopped
    • 3 Tbsp. minced fresh cilantro
    • 2 Tbsp. grnd cumin Salt and freshly grnd black pepper
    • 12 x ears fresh corn, husked

    Directions

    1. Prepare a charcoal or possibly gas grill. Lightly spray the grill rack with vegetable oil spray to prevent sticking. If using charcoal, let the coals burn till they are warm to medium-warm, covered with a thin layer of white ash, and glowing deep red.
    2. Put the butter in a small bowl, add in the garlic, cilantro, and cumin, and mash with a fork till mixed. Season to taste with salt and pepper.
    3. Brush each ear of corn with the garlic butter. Lay the corn on the grill rack and grill over medium-high heat for 4 to 6 min, turning several times, and basting with additional butter, till nicely browned. Just before serving, brush with the remaining butter, season with salt and pepper, and serve at once.
