Grilled Corn And Squash Quesadillas
Ingredients
- Grilled Corn and Squash (see recipe)
- 12 x flour tortillas - (8" dia)
- 2 c. shredded Monterey Jack cheese - (8 ounce)
Directions
- Spoon Grilled Corn and Squash proportionately on half flour tortillas, and sprinkle each portion with cheese. Fold tortillas over filling.
- Cook, in batches, on a warm, lightly greased griddle or possibly nonstick skillet 2 to 3 min on each side or possibly till lightly browned. Serve quesadillas immediately.
- This recipe yields 12 servings.
